Long known and respected for its chocolates, Belgium is also a great cheese country. It is said that, despite its small size, Belgium produces as many distinct types of cheese as does France. Many of its 300+ varieties are made in very small quantities and are not exported out of the country. The examples we do get, however, are quite impressive. This unique assortment includes three of our favorites: * Chimay Trappiste with Beer: Made by the trappist monks of Scourmont, this semi-hard pressed cheese is washed in Chimay ale and matured for six weeks. Made from fine, fresh, creamy milk, it has a trademark creaminess and flavor. * Capra Honey Goat: This chevre comes from the mountainous Walloon speaking region in the south. The addition of a drop of sweet Belgian “liquid gold” gives the cheese a hint of sugar that is extremely pleasing to the palate. * Passendale: A semi-soft cow’s milk cheese, Passendale impressed us as a sure hit the first time we tasted it. We loved its delicious flavor and sweet bouquet and found it to have universal appeal. You will feel comfortable serving this cheese to anyone, as it will not offend those with basic tastes, yet will still wow the connoisseurs. On The Edge Of The Ituri Forest Northeastern Belgian Congo On the Edge of the Ituri Forest Northeastern Belgian Congo, 26 selections from Hugh Traceys numerous recordings of the Bundu, Mangbele, Nande, Mbuti, and Bira peoples are presented. Originally collected in 1952, these field recordings were made in villages located around the eastern and northeastern boundaries of the Congo, close to the edge of the immense Ituri rain forest. On this CD one can hear Pygmies playing on a variety instruments that were stored for them by the sedentary Nande, Budu musicians performing a party songs on conical drums covered with elephant ear drum heads, the sound of flute encased in a shriveled up pigs tail, and a Mangbele percussion ensembles call for circumcision. Though Hugh Traceys inclination to at times conduct the performers he was recording gives his work less ethnographic and ethnomusicological authority, his detailed documentation of the performances should win him commendation. The detailed booklet that accompanies the CD is liberally peppered with vivid descriptions, photos, and many names of the performers.
